I’ve been on a huge ice cream and froyo kick lately….mainly because of the warm, sunny weather we’ve been so lucky to have (yay!). Too much Menchies and Qoola can’t be a good thing so I put my Vitamix to work: 3 ingredient ice cream (or ‘froyo’)!

{free of: dairy, sugar, gluten, wheat}
My photo skills are terrible so it doesn’t reflect how smooth and creamy it really is! So creamy that you won’t believe there isn’t any dairy! The texture is almost exactly like frozen yogurt or soft serve ice cream. The banana adds a nice sweetness and the mango makes it flavourful. You can get creative with the recipe and add in two tablespoons of cocoa powder and omit the mango for a chocolatey ice cream.
Mango Banana Froyo Serves 1 mama and 2 hungry monkeys
Ingredients
– 1.5 medium frozen bananas
– 2 c. frozen organic mangoes (I get mine from Costco)
– splash of nut milk (I use Silk coconut almond) OR squeeze of fresh lemon juice for tang (I love me some tang!) (this is completely optional)
– Optional toppings – unsweetened coconut, sliced raw almonds, drizzle of nut butter, real maple syrup, etc..
Method
1. Put the banana and mango in the blender and turn on high. This could take a 2-6 minutes. Be sure to pause it periodically to scrape down the sides and push the fruit down towards the blade. It took me about 2.5 minutes in the Vitamix.
2. Add in nut milk and/OR lemon juice if it looks like it needs a bit of liquid to move things along. Careful not to add too much or you may lose the texture of froyo and cause it to be too runny.
3. Scoop into a bowl and add your toppings. My fave are unsweetened shredded coconut.
4. Enjoy!
Some Options:
- omit the mango and add in two tbsp cocoa powder
- Banana and frozen strawberries/blueberries/cranberries
- Banana and unsweetened coconut
- Banana and raw cacao
- Banana and almond butter / peanut butter with two tbsp cocoa powder
I love my Vitamix. I had used several other brands of blenders before: Black and Decker, President’s Choice version of the Magic Bullet, Kenmore. I LOVE how versatile and strong the Vitamix is and will definitely never go to any other brand.
